List of ingredients for salmon and asparagus packages

  • 2 slices of salmon fillet

  • 2 tablespoons vegetable stock or chicken broth

  • 1 tbsp half of fresh lemon juice, or to taste

  • 1 tablespoon of your favorite hot sauce (we used Sriracha)

  • 4 teaspoons chopped garlic (4 cloves)

  • Salt and freshly ground black pepper, to taste

  • 3-4 tablespoons of butter, diced (or ghee)

  • 2 tablespoons of chopped fresh parsley or coriander

  • 1 lb (450 g) mediocre asparagus, trimmed woody ends

Directions

1. To prepare the salmon recipe: preheat the oven to 220 ° C. Cut 2 aluminum sheets of 12 inches (35 x 30 cm) in heavy-duty aluminum, then place each piece separately on the work surface. In a small bowl, combine the ingredients for the garlic butter sauce: broth, lemon juice and hot sauce.

2 . Season both sides of the salmon fillets with salt and pepper and divide the salmon onto the aluminum foil near the center, then arrange the asparagus cut on one side of the salmon, following the direction of the sheet.

3. You can adjust the seasoning of the salmon with more salt and pepper, then sprinkle with garlic. Season the garlic butter sauce generously over the salmon fillets and asparagus.

4. Divide the pieces of butter evenly between the foil packets, overlapping them over the salmon and asparagus.

5. Wrap the salmon foil packets and join the edges together, then wrap the ends. Don't wrap too tight - keep some extra space inside to let the heat circulate.

6. Transfer the salmon foil packets to a baking sheet and bake in the oven, sealed side up until the salmon has cooked through, about 9 - 12 minutes.

7. Carefully discard the packets of baked salmon then season with more lemon juice and garnish with fresh parsley or coriander and a slice of lemon.

Notes:

    • It is possible to double the amount of salmon fillets for a family meal.

    • In general, it is better not to cook salmon fillets too much. If you like salmon and asparagus a little crunchy, open the aluminum packages and cook the salmon in the oven for 2 minutes.

    • Asparagus can be thick and take longer to cook. You can burn them first in boiling water for a few minutes before emptying and cooking in aluminum packages.

    • If aluminum foil is a problem, you can use parchment paper to prepare salmon packages.

    • For non-keto dieters, a teaspoon of honey over salmon fillets before baking is a must!
