  • red potatoes 1,5 lb baby, washed and quartered

Indications


1. Preheat the oven to 200 ° C (400 ° F). Grease a large pan with non-stick spray or olive oil and set aside.

2. Parboil the red potatoes in boiling water for 5-8 minutes before preparing them. They will be softer when they are roasting.

3. In a large bowl, combine 1/4 cup of olive oil, garlic, salt, herbs, pepper and Parmesan together, stirring to combine. Add a little olive oil if the Parmesan has absorbed most of it.

4. Mix the boiled potatoes through the mixture of Parmesan garlic evenly.

5. Arrange the patinated potatoes cut upside down in a single layer on the prepared pan. Place the pan on the lower grill of the oven. Cook for 25 minutes, turning after 15 minutes with tongs or a spatula, until the potatoes are golden and crunchy at the edges.

6. Meanwhile, gently melt the butter in the microwave and add the chopped fresh parsley. Remove the potatoes from the oven and season with the butter and parsley sauce. Add the bacon slices, mix well to coat and serve immediately. Notes:

  • For extra golden potatoes, you can cook the potatoes for 2-4 minutes after roasting.

  • Potatoes are optional, if you want to skip this step, just roast potatoes for 35 - 40 minutes.

  • Allow the potatoes to cool for a couple of minutes on the pan before removing them. This will guarantee the Parmesan to the potatoes, not on the surface of the baking sheet.
