  • 3 - 6 without skin, boned chicken legs

Directions


1. In a small bowl, combine powdered onion, paprika, salt and pepper. Season the chicken legs generously with the spice mixture. Set aside while preparing the green beans.

2. Arrange the green beans in a safe microwave dish with 1/2 cup water (125 ml). Cook in the microwave for 8-10 minutes, until it is almost finished but still crunchy.

3. Dissolve 2 tablespoons of butter in a large skillet over medium-low heat. Place the seasoned chicken thighs in a single layer in the pan. Cook for 5-6 minutes, then invert and cook for another 5-6 minutes, until cooked and a kitchen thermometer displays 75 ° C (165 ° F). If the chicken browns too quickly, lower the heat. Adjust the times according to the thickness. Transfer the chicken to a plate and set it aside.

4. In the same pan, lower the heat and melt the remaining tablespoon of butter. Add chopped parsley, garlic, hot sauce, flakes of chopped red pepper and pre-cooked green beans and cook for 4 or 5 minutes, stirring regularly, until cooked to taste. Add lemon juice and chicken broth and reduce the sauce for a couple of minutes, until it is slightly thickened.

5. Add the cooked chicken thighs to the pan and heat quickly. Adjust the seasoning with pepper and serve the chicken thighs with the garlic butter immediately, garnished with more chopped chilli pepper, fresh parsley and a slice of lemon if desired. Enjoy!
